Thinking about the weekend. There's a Couchsurfing beach trip this weekend, and the coast *does* sound nice, buuuuut I find myself thinking that I'd rather stay home, so I can go to [livejournal.com profile] saofoir's birthday party. It's been way too long since I've seen y'all, and I miss my friends.

And hell, it's my birthday weekend, too, so what could be better than spending it with people I know and love? Sounds better than going to the coast with a bunch of strangers. (well, okay, so Boy and Risa aren't strangers, but still...) I guess I'll talk to Boy about it later. Bleh, I have a list of things to talk to Boy about, but I haven't had time or energy/inclination. I guess tonight's as good a night as any?

In other news, I made super-healthy veggie pizza last night! I found a yeast-free crust recipe, so I took that as inspiration, and made it my own with some wacky grains. I also used garbanzo beans as a base instead of pizza sauce, and then put mozzarella, fresh tomato and spinach on top. So yummy! Here's the recipe:


1 cup whole wheat pastry flour
1/2 cup flax seeds, ground
1/2 cup old-fashioned oats, ground
1/2 cup amaranth (dry)
pinch of kosher salt
1 Tbsp. baking powder
3 Tbsp. olive oil
1 1/4 cups water
dried herbs, if you like

Mix all of the dry ingredients together thoroughly. (and herbs, if you're using them) Add the oil and mix again. Finally, add the water and mix until you have an even dough. Move the dough to an oiled baking sheet, and spread the dough on the sheet to desired thickness and size. (flour on your hands will make this easier!)

Bake at 450F for 8 minutes, add sauce/toppings, and then bake for another 8-10 minutes.

If you like it hearty, you'll love this. If you're into chewy crusts, this may not be your bag, as it's yeast-free and not kneaded. Still, it's so freakin' easy that you can just whip it up on a whim, and I *love* that.
